Collected from Mallee trees in the red ochre soils of Western Australia's historic Goldfields district, this honey, in taste and colour embodies the harsh extremes of the desert environment its collected from! Produced in small batches as the deserts seasons are unforgiving with common droughts and heat stress on these Mallee trees.

PROVENANCE | In the desert near the country town of Norseman, Western Australia

AROMA | A dry, woody aroma of hessian coffee sacks, leather, suede boots and black
pepper.

FLAVOUR | A Jaffa, chocolate orange flavour leads along with hints of rosewater. There’s a juicy, syrupy burst throughout with flavours of golden syrup and canned pineapple juice that results in a sparkling, refreshing finish.

SUMMARY | The aroma and flavour of this honey are so different, giving it a delightful complexity. A dry, dark aroma leaves you unprepared for the sparkling, bright, syrupy flavours of Jaffa, rosewater, golden syrup and canned pineapple juice. A honey filled with sunshine flavours.

PAIRING IDEAS | It’s similarity to the sauce you get on a banana fritter in a Chinese or Thai restaurant means I’m leaning toward recommending it in a similar way. This would be a perfect complement to drizzle over naturally caramelised barbequed fruit like pineapple
or banana. Similarly, the refreshing flavour profile would be a great sweetener for iced teas. A honey that reminds me of summer.
