47Our Marri Honey is collected from the rich and ancient Marri forests in Dwellingup, Western Australia. Sometimes referred to as Red Gums due to their deep red sap, the Marri trees yield beautiful cream coloured white and pink blossoms from which our bees source their honey.
Flavour: The flavour starts with a vibrant balance of rich, ripe-raisin-led, dried fruit flavours that evolves to a fruit-toffee sweetness with raspberry cola notes and finally resulting in a smooth toasted caramel finish.
Pairing ideas: This is a great honey to sweeten cocktails or drinks. The fruit-forward, confectionary-like profile will lift spirits such as whiskey or rum, while the delicate raisin-richness will contrast and bring a warmth to white spirit-based drinks such as vodka.

What is Total Activity?
Total Activity (TA) is the measurement of the honey's antimicrobial quality or its antimicrobial strength in killing bacteria. Any honey with a TA rating higher than 10+ has beneficial antimicrobial properties. The larger the TA number, the stronger the antimicrobial effect level of the honey.
We get most of our honey tested for its Total Activity by the NATA registered Chem Centre of Western Australia, Intertek, and Analytica Laboratories.
